What Is Giling Basah — or Wet-Hulled Coffee?

This may be one of the most interesting lessons in our entire single-origin journey.

Indonesia has a coffee-processing method known as giling basah, commonly translated as wet hulling.

After coffee cherries are harvested and pulped, the seeds begin drying while still surrounded by a protective parchment layer. In the giling basah process, that parchment is removed while the coffee still contains considerably more moisture than it would during conventional dry hulling.

The exposed green coffee is then dried further. Indonesian agricultural material identifies this semi-wet method as one practiced by smallholder Arabica farmers in major producing areas, including Sumatra.

Processing isn't separate from the origin story. Sometimes it becomes one of its most fascinating chapters.
