Cold Brew Isn't the Same Thing as Iced Coffee
This is one of the most useful lessons in the entire Cold Brew Classroom.
Iced coffee generally begins with coffee brewed using hot water and then cooled or poured over ice.
Cold brew uses cool or cold water during the extraction itself. Because cooler water extracts differently, the coffee usually remains in contact with the water much longer than it would during hot brewing.
The final drinks may both arrive in your glass cold, but they took completely different brewing journeys to get there.

What is cold brew?
Cold brew is coffee extracted using cool or cold water over a much longer period than conventional hot brewing.
Is cold brew the same as iced coffee?
No. Iced coffee is typically brewed hot and then cooled or poured over ice. Cold brew uses cool or cold water during the extraction itself.
How long does cold brew take?
Cold brew generally requires a much longer extraction than hot coffee. Our starting recipe suggests approximately 12 hours, but the ideal time can change with ratio, grind, temperature, equipment and personal preference.
Do I need a special cold-brew machine?
No. Immersion cold brew can be prepared using a suitable jar, pitcher or purpose-built cold-brew brewer as long as the coffee can be filtered effectively afterward.
What is cold-brew concentrate?
Some cold-brew recipes produce a stronger concentrate intended to be diluted with water, milk or another ingredient. Other recipes produce coffee designed to be consumed directly.
Is cold brew automatically low acid?
No universal acidity result should be assumed from the words “cold brew” alone. Coffee, roast, ratio, extraction, dilution and measurement method can all affect acidity comparisons.
Does cold brew automatically contain more caffeine?
No. Caffeine depends on factors including the coffee, amount used, brew ratio, concentration, serving size and dilution.
Should prepared cold brew be refrigerated?
Yes. Keep prepared cold brew refrigerated and use clean brewing and storage equipment. Refrigeration is especially important when milk, cream or other perishable ingredients are added.
Can I drink Cold Brew Blend hot?
Yes. Brewing the same coffee hot and cold can actually make an interesting comparison because extraction temperature and serving temperature can change the sensory experience.
What grind should I use for cold brew?
Many immersion-style cold-brew recipes begin with a relatively coarse grind. Your brewer, filtration system and recipe should guide the final choice.
